TCM: A light summer dish; zucchini cools, the spices add warmth without heat.

Ingredients

  • Large zucchini (approx. 1.5–1.8 kg), cut into small cubes – 4
  • Red onions, finely chopped – 4
  • Garlic, chopped or pressed – 4 cloves
  • Brown button mushrooms, thinly sliced – 1 kg
  • Fresh parsley leaves, chopped – 400 g
  • Olive oil – 4 tbsp

Spices

  • Whole juniper berries (can be crushed) – 1 tsp
  • Allspice – 1 tsp
  • Cumin (jeera) – 1 tsp
  • Ground black pepper – 1 tsp
  • Ground coriander – 1 tsp
  • Smoked paprika – 1 tsp
  • Bay leaves – 2
  • Salt to taste

Method

  1. Preparing the vegetables: Wash the zucchini and cut it into small cubes – the smaller they are, the more evenly they cook and the better they soak up the spices. Peel the onions and chop them finely.
  2. The sauté base: Heat the olive oil in a wide pan or pot and soften the onion over medium heat until golden (about 2–3 minutes). Add the chopped garlic and sauté for another 30 seconds, until the aroma opens up.
  3. Mushrooms: Add the washed and sliced mushrooms. Sauté over medium to medium-high heat for about 15 minutes, until the mushrooms release their water and gradually cook it off. Stir now and then.
  4. Seasoning: Add the prepared spices to the mixture: juniper, allspice, cumin, black pepper, coriander, smoked paprika and bay leaves. Stir so all the flavors come together.
  5. Zucchini and parsley: Add the cubed zucchini and chopped parsley. Stir and let it braise for about 7–10 minutes, until the zucchini softens but still keeps its structure. Season with salt as needed.

Serving

Serve warm as a light main course or side dish. It tastes great with jasmine or basmati rice and steamed or boiled potatoes. For garnish, add fresh parsley leaves and a few drops of lemon juice for freshness.
