Risotto alla milanese comes from Lombardy in northern Italy. It is built on delicate arborio rice cooked in wine and stock, flavored with saffron and finished with butter and Parmesan. This golden, creamy classic is served as a main course or as a side – for example, with braised meat.

TCM: Saffron and butter round out the flavor and gently support mood and digestion.
Ingredients
- Arborio rice – 800 g
- Dry white wine – 200 ml
- Medium onions – 2 (about 250 g)
- Butter – 80 g (divided between cooking and finishing)
- Vegetable or meat stock – 1.5–2 l (warm, ideally homemade)
- Saffron – 2 pinches (soaked in 50 ml warm water)
- Grated Parmesan – 150 g
- Salt, black pepper – to taste
- Olive oil – 2 tbsp
Method
The base
- In a pot, sauté the finely chopped onion in the olive oil and half the butter until translucent. Add the rice and stir until it is glossy and coated in fat (about 2–3 minutes).
Wine and cooking
- Pour in the wine and let it evaporate. Gradually add the hot stock – each time just enough to cover the rice. Keep stirring throughout the cooking (about 18–20 minutes).
Saffron and finishing
- After about 10 minutes of cooking, stir in the saffron along with its soaking water. When the rice is al dente and the risotto creamy, take it off the heat and add the remaining butter and the Parmesan. Stir thoroughly and let it rest, covered, for 1–2 minutes.
Serving
Serve hot, on its own or as a side to braised meat (e.g. ossobuco). You can garnish with Parmesan shavings, freshly ground pepper or herbs.
