  • Dried lemongrass – 5 g
  • Fresh ginger – 30 g
  • Fresh chili (mild) – 10 g
  • Ground coriander – 4 g

  • Vegetable stock or water – 4.5 l

Method

  1. Peel the carrots and potatoes and cut them into smaller pieces so they cook evenly.
  2. Lightly bruise the fresh lemongrass to release its aroma.
  3. Finely chop the ginger and chili.
  4. Bring the stock or water to a boil in a pot and add the carrots, potatoes, both fresh and dried lemongrass, ginger, chili, coriander and fennel.
  5. Cook over medium-low heat until the vegetables are soft (about 25–30 minutes).
  6. Once cooked, remove the lemongrass pieces and blend the soup until smooth.
  7. Season with salt and white pepper to taste.
