TCM: Beef warms; buckwheat and herbs support digestion.

Ingredients

Patties

  • Ground beef – 1 kg
  • Buckwheat (soaked overnight) – 200 g
  • Onions – 300 g (finely chopped)
  • Smoked paprika – 1 tsp
  • Blue fenugreek – 1 tsp
  • Black pepper – ½ tsp
  • Allspice – ½ tsp
  • Parsley leaves – 50 g (finely chopped)
  • Olive oil or lard/tallow – 2 tbsp
  • Tomato paste – 1 tbsp
  • Salt – 22 g

Method

  1. Drain the soaked buckwheat and squeeze it out thoroughly.
  2. Mix all the ingredients in a bowl into a compact mass.
  3. Let the mixture rest for at least 2 hours so the flavors come together and the buckwheat binds the liquid.
  4. Shape patties of about 70 g each (about 20 in total).
  5. Place them on a baking sheet with a rack.
  6. Bake in an oven preheated to 220 °C for about 15–20 minutes, or until they reach an internal temperature of 62 °C.

Serving

Serve 2 patties per portion, ideally with a potato side, mash, purée or a vegetable salad.

Key ingredients

Beef
Quality protein, haem iron and B12; slow braising makes it easier to digest.
Onion
Prebiotic fibre for the gut flora, anti-inflammatory flavonoids.
Fenugreek (kasuri methi)
Traditionally supports digestion and blood sugar; a gently bitter aroma.
Tomatoes (peeled / passata)
Lycopene (an antioxidant), the umami base of sauces.
Red bell pepper
High in vitamin C and antioxidants; sweet once roasted.
Potatoes
Complex carbohydrates, potassium and vitamin C; a filling side.
Buckwheat
Gluten-free; complete protein and rutin.

Why it’s good for the body

  • Buckwheat is naturally gluten-free and brings fiber and rutin.
  • Herbs and spices traditionally support digestion.

Traditional and functional notes on the ingredients — not medical claims.

Notes

  • The patties also work well on a cold buffet.
  • They can also be made in a pan or in a combi oven.
  • The buckwheat can be replaced with cooked rice.
